Cheese Sandwich with green chutney

Cheese Sandwich with green chutney







Ingredients
  • Oven fresh bread slices                               4 nos
  • Fresh cucumber round slices                     1 cup
  • Fresh tomato round slices                          1 cup
  • Boiled egg round slices                              1/2 cup
  • Processed cheese grated                            1/2 cup
  • Fresh cream                                                2 tbsp s
  • Mayonnaise sauce                                      2 tbsp s
  • Tomato sauce                                             2 tbsp s
  • Green chutney  (pudina chutney)             4 tbsp s
  • Bhujia sev                                                 1/2 cup





Process of green chutney

Take a mixer grinder jar, add fresh 1/2 cup mint leaves (pudina), 1 cup fresh coriander, 1 green chili, 1 tsp sugar, 2 tbsp s raw mango pieces or 2 tbsp s lemon juice and salt to taste. Make smooth chutney adding 1/2 cup of water. Green chutney is ready.



Process of sandwich

Remove sides from fresh bread slices. Mix fresh cream with mayonnaise sauce in a bowl. Spread 2 tsp of cream & mayonnaise mix in one side of one bread slice.  Keep two tomato round slices and cucumber slices on the cream applied bread slice. Now keep boiled egg slices and spread 2 tbsp s bhujia sev over the slice. Spread 1 tsp grated cheese over bread slice. Now add 1 tsp tomato sauce over the slice. Spread 1 tsp green chutney over it. Now spread 1 tsp of green chutney in one side of another bread slice. Now cover the garnished bread slice with green chutney applied bread slice and just press smoothly. Cut the bread sandwich as you wish or as shown in the picture. Now yummy and healthy cheese sandwich with green chutney is ready to eat and serve.

 Spring Buns with manchurian balls




Ingredients for manchurian balls
  • Chopped cabbage                          1 cup
  • Chopped cauliflower                     1 cup
  • Chopped carrot                             1 cup
  • Chopped beans                             1/2 cup
  • Boiled peas                                   1/2 cup
  • Corn flour                                    1/2 cup
  • Refined flour (maida)                 1/2 cup
  • China salt                                    a pinch
  • Soy sauce                                    1 tbsp
  • Salt to taste
  • Oil for deep fry






Ingredients for spring buns
  • Fresh round buns                        8 to 10 nos
  • Schezwan chutney                      1/2 cup
  • Mayonnaise sauce                      1/2 cup



Process

Take a mixing bowl , add all the ingredients of manchurian except oil. Mix all the items well with out adding water. Add little water if required and make small round balls. Now heat oil for deep fry and fry manchurian ball till golden brown in medium flame. Take out balls from oil and keep them on tissue paper to remove excess oil. Now give a cut in the center of the bun as shown in the picture. Now apply 1 tsp schezwan chutney in one side and apply 1 tsp mayonnaise sauce in another side. Now keep manchrian ball in the center and close the bun. Now yummy spring buns are ready to serve and eat.

Crispy Sabodana Vermicelli Pakoda


Ingredients


  • Sabodana soaked in water for an hour              1 cup
  • Vermicelli boiled                                                1 cup
  • Potato boiled and grated                                   1/2 cup
  • Green chilies chopped                                      1 tbsp
  • Karepatta (curry leaves) chopped                   1 tbsp
  • Fresh coriander chopped                                2 tbsp s
  • Onion finely chopped                                     1 tbsp
  • Salt to taste
  • Oil for deep fry

Process

Remove water from soaked sabodana. Take a mixing bowl, add all the above ingredients except oil and mix smoothly. Make a smooth and tight dough and heat oil for deep fry. Deep fry small round pakodas in oil till  golden brown.Take out fried pakodas and use tissue paper or kitchen towel to remove excess oil from pakodas. Now yummy, crispy and tasty sabodana vermicelli pakodas are ready to eat and serve with any chutney or with tomato sauce.

Note: Left over vermicelli upma or semolina (suji) upma can be used instead of boiled vermicelli.

Panner Aloo Bonda



Panner Aloo Bonda




Ingredients

  • Panner grated                                 1/2 cup
  • Boiled grated potato                       1 cup
  • Carrot (grated)                                1/2 cup
  • Coriander chopped                         1 tbsp
  • Chili powder                                   1 1/2 tsp
  • Maggi magic masala                      1 tsp
  • Garam masala powder                   1/2 tsp
  • Gram flour (besan)                        1 cup
  • Carom seeds (ajwain)                    1 tsp
  • Baking soda                                   1/4 tsp
  • Lemon juice                                   1/2 tsp
  • Salt to taste
  • Oil for deep fry
Process

Take a mixing bowl and mix grated boiled potato with grated panner, grated carrot, chopped coriander, 1 tsp chili powder, magic masala, garam masala, lemon juice and salt to taste. Mix all the ingredients well and make small round balls and keep them aside. Now heat oil for deep fry. For batter take a bowl and add gram flour, carom seeds, 1/2 tsp chili powder, 1/4 tsp baking soda and salt to taste. Now mix all the ingredients and make smooth thick batter using required amount of water. Now dip each potato ball in the gram flour batter (besan) and deep fry in the oil. After 2 to 3 mins simmer the flame and turn and roll the balls smoothly in the oil for equal fry and color. Take out the balls from oil when they are golden brown and keep them in tissue paper to avoid excess oil from bondas. Now mouth watering and yummy bondas are ready to eat and serve.

Green Noodles

Green Noodles



Ingredients


  • Noodles (boiled)                      1 big cup
  • Capsicum (green) pieces        1/2 cup
  • Fresh green peas                    1/4 cup
  • Spring onions chopped          1/2 cup
  • Green chilies slices                6 nos
  • Green chili sauce                   1 tsp
  • Maggi magic masala              1 tsp
  • China salt a pinch
  • Sugar a pinch
  • Salt to taste




Process

Keep pan on the flame, add 2 tbsp s oil and heat it. Now add spring onion slices and saute for few mins, then add green chili slices and saute. Now add green pepper pieces, fresh green peas and saute for few mins.Now add boiled noodles and mix well. Now add sugar, salt, china salt, green chili sauce and maggi magical masala and mix well. Saute for 5 to 10 mins in a lower flame. When done add fresh chopped coriander if needed. Finally healthy, yummy and tasty green noodles is ready to eat and serve with green chili sauce.

Burger

Burger (simple &tasty)

Ingredients

  • Burger buns                      2 nos
  • Onion circles                    6 nos
  • Tomato circles                  6 nos
  • Cheese slices                     4 nos
  • Fresh cabbage leaves       2 nos
  • Dressing sauce                  2 tbsp s
  • Boiled eggs slices             6 nos
  • Butter                                1 tbsp

Ingredients for patty (tikkies)


  • Boiled potato (grated)         1 cup
  • Boiled fresh peas                1/2 cup
  • Fresh coriander chopped   1 tbsp
  • Garam masala powder       1 tsp
  • Salt to taste 

Process

In a mixing bowl mix grated potato, peas, coriander, garam masala powder and salt. Make bun size round tikkies and fry in a tawa both sides adding butter till golden brown and keep aside.

Now cut bun in to two halves and fry slightly for few mins in a tawa adding butter and keep aside.

Plate, keep one piece bun and apply 1 tsp dressing sauce, keep cabbage leaf and keep onion slices with tomato slices. Then keep tikki and keep a cheese slice over it then boiled egg slice, onion circles and tomato slice one by one. Then keep another fresh cabbage leaf over the tomato slice. Then apply dressing sauce on the other half bun and cover the burger. Now, lock the burger with a tooth pick as shown in the picture.

Now, tasty and simple burger is ready to eat.

Coconut Prawns

                                     Coconut Prawns

Ingredients :

  1. Prawns(2 inch)                                      10 no.s
  2. Egg                                                         1 no.s
  3. Coconut(grated)                                     1 cup
  4. Chilly powder                                         1 tsp
  5. Tandoori masala powder                        1 tsp
  6. Lemon juice                                           1 tbsp
  7. Ginger and Garlic paste                          1 tsp
  8. Corn flour                                               2 tsps
  9. Salt                                                         to taste
  10. Oil                                                          for deep fry

Process :

               Marinate prawns, chilly powder, tandoori powder, lemon juice, ginger & garlic paste, cornflour and salt in a mixing bowl. Keep aside for about half an hour. Heat oil for deep fry on the stove. Beat egg with a pinch of salt in another bowl. Now, dip each marinated prawn in beaten egg and roll in grated coconut and deep fry till golden brown. Take out fried coconut prawns from oil and put them in tissue paper to soak excess oil. Garnish with grated coconut and serve hot.

Biscuit snack









Biscuit snack

Ingredients

  • Salt biscuits                                            12 nos
  • Boiled and mashed potato                     1 cup
  • Steamed sweet corn                              1 cup
  • Onion finely chopped                           1/2 cup
  • Coriander chopped                              1 tbsp
  • Black salt                                             to taste
  • Roasted cumin powder                       1/2 tsp
  • Chili sauce                                         1 tbsp
  • Tomato sauce                                    2 tbsp s
  • Thin bhujia sev                                 3 tbsp s
  • Pudina chutney                                 2 tbsp s


Process

Place a bowl and add mashed potato paste, corn, onion, coriander, black salt and cumin powder. Mix well and set aside. Now plate each salt biscuit on a plate and keep one spoon of above potato mixture on each biscuit. Now add a drop of chili sauce on it and then add 1/4 tsp of pudina chutney and 1/4 tsp of tomato sauce on it. Finally sprinkle 1 tsp of bhujia sev on the top. Now yummy, tasty and delicious biscuit snack for evening snack is ready to serve.

Lotus stem chips



Ingredients

  • Lotus stems (chips shaped circles)            1 big cup
  • Hung curd   (fresh)                                  1/2 cup 
  • chilly powder                                             1 tsp
  • Mutton masala powder                            1 tbsp
  • Corn flour                                               1/2 cup
  • Sugar                                                      a pinch
  • Salt to taste

Process


Remove skin from the lotus stems with a peeler and cut in to round circles. Take a mixing bowl, add lotus rings, hung curd, chilly powder, masala powder, corn flour, sugar and salt and mix well. Heat oil in a pan for deep fry. When done fry marinated lotus rings in the oil till golden brown and crisp. Serve hot as a snack.

Indian spicy Burger

Ingredients

  • Burger buns (small size)                        6 nos
  • Onion circles                                         6 nos
  • Tomato circles                                      6 nos
  • Tomato ketchup                                   1/2 cup                                  
Ingredients for green chutney
  • Pudina leaves (mint)                             10 nos
  • Coriander Chopped                              3 tbsp s
  • Green chilies                                       2 nos
  • Fresh mango pieces or lemon juice     1 tbsp
  • Salt                                                     to taste
Ingredients for tikki
  • Boiled and grated potato                     1 cup
  • Boiled and mashed peas                     1/2 cup
  • Grated fresh panner                           1/2 cup
  • Chopped coriander                             2 tbsp s
  • Grated ginger                                     1 tbsp
  • Chana masala powder                        1 tbsp
  • Chopped green chilies (optional)        1 tsp
  • Fried chana dal powder                     4 tbsp s
  • Bread crumbs                                    1/2 cup
  • Sev Bhujia)                                       1 cup
  • Chili powder                                      1 tsp
  • Salt to taste
Process

For green chutney, grind all the green chutney ingredients in a mixer grinder adding little quantity of water and make a smooth paste and green chutney is ready.

Cut burger buns in to two pieces and fry in a tava adding 1 tsp butter both sides till golden color and keep aside.

For tikki, take a mixing bowl, add all the tikki ingredients except bread crumbs, make round tikkies and roll the tikki in the bread crumbs and fry in a non stick tava adding oil as requred till golden brown both sides in a lower flame. Now tikkies are ready and keep them aside.

Take a serving plate, place bun and apply green chutney (1 tsp), now keep 1 tikki on the bun, then keep onion circle and tomato circle and put 1 tsp of sev (bhujia). Now apply tomato ketchup on the other half of the fried bun and put it on the burger. Now tasty, yummy and delicious Indian Spicy Burger is ready to serve.

Panner Tikki

Ingredients

  • Panner (grated)                                  1 1/2 cup
  • Potato (boiled) grated                         1 cup
  • Grated processed cheese                    3 tbsp s
  • Chopped green chilies                        2 tbsp s
  • Chopped onion                                  2 tbsp s
  • Chopped coriander                            2 tbsp s
  • Chopped capsicum                            1 tbsp
  • Garam masala powder                     2 tsp s
  •  Sugar                                              a pinch
  • Salt                                                  to taste
  • Bread crumbs                                1 cup

  




Process

Take a mixing bowl. Put grated panner in it, add half boiled grated potato, grated cheese, green chilly pieces, chopped onion, chopped coriander, chopped capsicum, sugar, salt, garam masala powder and 1/2 cup bread crumbs. Mix well and make round tikkies and roll in bread crumbs and fry in a tava in a low fire adding 1 tsp of oil both sides till golden brown. Now yummy panner tikkies are ready to serve with pudina chutney (mint chutney) or with tomato sauce.

Kattal oil fry

Kattal oil fry



Ingradients

  • Kattal 1 inch pieces (raw jack fruit)        1 cup
  • Corn flour                                              3 tbsp s
  • Ginger & garlic paste                             1 tsp
  • Chilly powder                                         1 tsp
  • Hung curd                                             2 tbsp s
  • Kitchen-king masala powder                  1 1/2 tsp
  • Turmeric powder                                   a pinch
  • Salt                                                        to taste
  • Oil for deep fry


Process


Place a cooker, cook raw jack fruit pieces with a pinch of turmeric powder, 1 tsp oil and 1 tsp salt for 2 whistles in the cooker. Off the flame and let it cool. Then stain the boiled kattal pieces in a strainer  Now place a mixing bowl, add cooked raw jack fruit pieces, hung curd, chilly powder, masala powder, g & g paste, corn flour and salt to taste. Mix well, keep aside for few mins. Now heat oil for deep fry in a kadai, fry each marinated masala kattal pieces(raw jack fruit) in oil till golden brown. Take out from the oil and keep them in a tissue paper to remove excess oil. Now crispy, crunchy, tasty and yummy kattal fry is ready to serve.

Uttapam Pizza

                                 Uttapam Pizza



Ingredients

  1. Rice                                                2 cups
  2. Urad dal (Idli dal)                             1 cup
  3. Tomato sauce                                  1/4 cup
  4. Green chilly sauce                            1/8 cup
  5. Maggi magic masala                         1 tsp 
  6. Fried chilly flakes                             1/2 tsp
  7. Mozzarella cheese (grated)               1 cup
  8. Capsicum (chopped)                         1/2 cup
  9. Sweet corn (blanched)                      1/2 cup
  10. Onion (chopped)                               1/2 cup
  11. Fresh coriander (chopped)                 1/2 cup

Process

Take a mixing bowl, mix rice with urad dal and soak through out the night. Make medium thick batter in a mixer grinder and add salt. Rest it for 6-8 hrs for fermentation. Take a non stick tawa on the stove, make medium sized uttapam by spreading batter on the tawa. Apply 1/2 tsp oil around the uttapam and cook in low flame by closing the lid for 3 mins. Open the lid apply 1 and 1/2 tbsp mixture of tomato sauce, chilly sauce and magic masala on the uttapam and spread it. Sprinkle onion, capsicum, sweet corn, coriander, chilly flakes and finally spread cheese and close the lid, cook for 5 mins. Now yummy, tasty, delicious uttapam pizza is ready to eat. Serve hot.

Golgappa (panipuri)

PANIPURI




Ingredients
  • Gol gappa (panipuri)                        12 nos
  • Boiled potato paste                          1/2 cup
  • Boiled dry peas                               1/4 cup
  • Onion (chopped)                            1/4 tsp
  • Coriander (chopped)                      1/4 tsp
  • Salt to taste 
  • Black salt (Rock salt)                     1 tsp
  • Green chilly paste                          1tsp
  • Water                                            1 lt
  • Tamarind pulp                              2 tbsp s
  • Lemon juice                                  1 tsp
  • Sugar                                            1 tbsp
  • Mint leaves                                   5 nos
  • Cumin seeds                                 1tsp
  • Sweet chutney                              1/4 cup
  • Sev                                              1/2 cup


Process

Process of making water

Take a mixing bowl, pour water add tamarind pulp, lemon juice, salt, black salt (1/2 tsp), sugar and 1 tbsp paste of green chilies, mint leaves .and cumin seeds. Mix well and panipuri water is ready.

Process of sabji

Take another bowl, add potato paste with boiled peas, salt, black salt (a pinch) and green chilly paste. Mix well and sabji is ready.

Process for sweet chutney-- 

Take a bowl, add 2 tbsp s tamarind pulp, 1 tsp jaggery, salt a pinch, a pinch of black salt and a pinch of jeera powder. Now mix all the above items and taste it, and sweet chutney is ready.








Process of plating

Take a serving plate. Make a hole in the center of each gol gappa and fill  1  tsp of sabji in each panipuri. Now add few chopped onion, few chopped coriander leaves, 1 tsp sweet chutney and little amount of sev. Now filled gol gappa is ready and pour 2 tbsp s water in small glasses and keep filled panipuri on the top of each glass.

Channa Chat

                                   Channa Chat



Ingredients

  1. Dry peas(soaked in water)                 1 cup
  2. Potato(skinless)                                   2 no.s                         
  3. Onions(chopped)                                1 cup
  4. Coriander(chopped)                           1/2 cup
  5. Chat masala powder                           2 tbsp s
  6. Fresh curd                                          1/2 cup
  7. Chilly powder                                      1 tsp
  8. Samosa                                               2 no.s
  9. Namkeen                                             few
  10. Black salt                                             1 tsp
  11. Tomato sauce                                     as required
  12. Salt                                                      to taste
  13. Sev                                                      as required



Process

Take a pressure cooker, cook soaked dry peas with potatoes in the cooker for 9-10 whistles. Now off the flame. Take a pan, pour 1 tbsp oil and toss half cup of onions and when done add cooked dry peas with mashed potatoes, mix well. Now add 250 ml of water to the peas, add chilly powder, a pinch of sugar and salt. Mix well, cook for 15 mins in a lower flame and finally add chat masala powder and mix well. Now chat is ready.


Plating

Take a medium sized serving plate, add crushed samosa, pour chat, spread chopped onions and coriander. Sprinkle a pinch of black salt, spread 1tbsp curd, 1 tsp tomato sauce and finally spread sev and crushed namkeen. Now delicious, tasty and mouth watering channa chat is ready to eat.
