Sindhi special Dal pakwan

Sindhi special Dal pakwan







Ingredients
  • Chana dal (soaked for an hour)    1 cup
  • Chopped onions                             1 cup
  • Chopped fresh coriander              1/2 cup
  • Chilli powder                                1 tsp
  • Garam masala powder                 1 tsp
  • Haldi powder                                a pinch
  • Aamchur (dried mango powder) 1 tsp
  • Jeera (cumin)                              1/4 tsp
  • Sliced green chillies                    4 to 5 nos
  • Karepatta                                     few
  • Salt to taste
  • Oil                                               1 tsp






Process

Cook soaked chana dal with a pinch of haldi and 1 cup of water for 3 whistles in a pressure cooker. When done keep the pressure cooker aside and let it cool. After 15 mins open the lid of the cooker and put it on the flame. Add 1/2 cup of water, 3/4 tsp chilli powder, aamchur powder and 3/4 tsp garam masala powder. Mix all the items well and add salt to it.Cook the dal till medium thick. Now keep a pan on the stove and add a spoon of oil. Add jeera, sliced green chillies and karepatta and saute. Now off the flame and add remaining chilli powder and garam masala powder to it. Now immediately transfer the contents to dal in the pressure cooker. Now add finely chopped coriander to dal and close the lid. We can use fried dried methi (kasuri methi) instead of coriander.
After 1 hour open the lid of cooker and serve dal as shown in the picture in a bowl with a piece of fried papad. Now dal pakwan is ready to serve with phulka or with paratha.

Healthy Rajasthani Dal

Rajasthani Dal






Ingredients

  • Urad dal (black gram) (with skin)        1 cup
  • Harad dal (dal) (cooked)                      1/2 cup
  • Green chilies                                         3 nos
  • Coriander fresh chopped                     1/2 cup
  • Ginger & garlic paste                          1 tsp
  • Tomato puree                                       1 cup
  • Curd                                                     1/4 cup
  • Chili powder                                        1 tsp
  • Turmeric powder                                 a pinch
  • Dhania powder                                    2 tsp s
  • Jeera powder                                       1 tsp
  • Garam masala powder                        1 tsp
  • Milk                                                     1/2 cup
  • Sugar                                                   1 tsp
  • Salt to taste



Process


Soak urad dal in water over night. Boil harad dal in pressure cooker and set aside. Cook urad dal adding turmeric powder and water. Now make a paste of green chilies with coriander and keep aside. Make tomato puree. Now take a pan on the flame, add 2 tbsp s oil and add garlic & ginger paste with green chili coriander paste to oil and fry for few mins. Then add tomato puree and saute well. Add cooked dals, curd, chili powder, dhania powder, jeera powder, sugar and salt. Mix well and add 1/2 cup of water and milk. Mix well and cook in lower flame for 5 to 6 mins. Finally add garam masala powder and chopped coriander and mix well and serve hot with phulka or with paratha.

Dal Makhani

Dal Makhani



Ingredients


  • Urad dal (black gram)(with skin)   1 cup
  • Rajma (kedny beans)                      1/4 cup
  • Onion chopped                               1/2 cup
  • Ginger & garlic paste                    1 tbsp
  • Tomato puree                                1/2 cup
  • Sliced green chilies                       few
  • Chili powder                                 1 tsp
  • Turmeric powder                         a pinch
  • Dhania powder                           1 tbsp
  • Cumin powder (jeera powder)   1/2 tsp
  • Garam masala powder               1 tsp
  • Tomato sauce                              2 tbsp s
  • Chopped coriander                     2 tbsp s
  • Butter                                          2 tbsp
  • Fresh cream                               2 tbsp s
  • Mustard oil                                1 tsp
  • Salt to taste


Process

Soak urad dal and rajma in water over night. Boil both dals adding 1 tsp of mustard oil, a pinch of turmeric powder and required amount of water for 5 to 6 whistles in pressure cooker. Now take a pan add butter and melt it, add chopped onions, g&g paste, sliced green chilies and saute it well. Now add tomato puree and mix and cook for 5 to 6 mins. When done add cooked dals, chili powder, tomato puree, dania powder, jeera powder and garam masala powder. Mix all the items well and cook adding 1/2 cup of water. Finaly add chopped coriander, salt and fresh cream. Mix well and serve hot with phulka or with paratha.

Anda Tadka

Anda Tadka



Ingredients

  • Harad dal                                            1/2 cup
  • Moong dal                                           1/2 cup
  • Chana dal                                            1/2 cup
  • Eggs                                                    3 nos
  • Green chilies                                       4 nos
  • Onion chopped                                    1/4 cup
  • Tomato chopped                                  1/4 cup
  • Coriander chopped                              1 tbsp
  • Mustard seeds                                     1/2 tsp
  • Jeera (cumin) seeds                            1/4 tsp
  • Fennel seeds                                       1/2 tsp
  • Karepatta                                            few
  • Fresh curd                                         1/4 cup
  • Kitchenking masala powder               1 tbsp
  • Sugar                                                 a pinch
  • Salt to taste
Process

Cook the above three varieties dals with a pinch of turmeric, 1/2 tsp cumin and 2 nos of green chilies in a pressure cooker for 4 to 5 whistles. Take a non stick pan, add 1 tbsp oil, add mustard seeds  cumin, fennel seeds and karepatta and toss well for few mins and then add chopped chilies with onion. When done add tomatoes and toss well. Now add the tadka (sizzling) to the cooked dal in the pressure cooker. Now pour 1 tsp oil in a pan, add 3 nos eggs to the oil and mix well and fry adding a pinch of salt to the eggs. When done add the fried egg pieces to the cooked dal in the pressure cooker. Keep the cooked dal on the flame adding salt to taste, a pinch of sugar, fresh curd and masala powder. Cook well by adding required amount of water for few mins and finally garnish with chopped coriander and serve with roti of butter non

SWEET DAL(dalma)


SWEET DAL(dalma)

·    Harad dal                                  2cups
·    Potato (dices)1inch               8pieces
·    Pumpkin(dices) 1inch          15pieces
·    Sweetpotato(dices)1inch    15pieces
·    Green chilli                             2nos
·    Red chilli                                2nos
·    Jeera,mustards                    1/2tsp
·    Soanf                                     1/2tsp
·    Karepatta                            few
·    Ghee                                     1tbsp
·    Jaggery                               1tbsp






Process
Take a pressure cooker, add ghee, let it heat, add mustards,jeera,soanf,karepatta,greenchilli(slices),redchilli(pieces) and sauté for few min and then add potato, pumpkin, sweet potato and toss it for few min and finally add dal and fry for few seconds and add water  as (required) close the lid and cook till the dal is soft. Open the lid add salt to( taste ) and add jaggery (1tbsp)  mix well, cook for few min, add water if required. The consistency of dal is medium thick. Now hot and delicious dal is ready to eat with roti or rice.
